Steve has the details on what sounds like a cool food event. Two chefs will "use local ingredients and molecular-gastronomy equipment and techniques including liquid nitrogen and hydrocolloids to create dinner for 12 people" at a house in Queensbury. It's not cheap ($285), but it sounds interesting. That is, if by "hydrocolloids" they're not talking about Jello.
