If chefs ran the state
NY Mag asked a handful of chefs what they think about the 18 percent tax on sugared soda that David Paterson has proposed. The consensus: boo. Suggested Christina Tosi, the chef at Momofuku Bakery & Milk Bar, "I'd tax not ordering dessert." Tosi in 2010!

Do people really pay attention to the cost of soda when they order? I think when most people order a "regular" drink (not a specialty item or alcohol) they just say what they want (soda, water, etc) without consulting the price list, if the menu even has one for drinks.
Besides, soda from fountains is already marked up a few thousand percent so a restaurant wouldn't exactly be taking a big hit if they didn't tack the 18% onto the price. I think the biggest concern for restaurateurs would be customer confusion over the bill when Little Sally's Diet Coke costs less than Big Sam's regular.
