There's an interesting article by Drew Kerr today about a recently-opened slaughterhouse in southern Washington County that's seeing tremendous demand from local farms. Around the country, slaughterhouse capacity is one of the roadblocks to the creation of sustainable regional food systems because small-scale producers of local, humanely and naturally raised animals are having a tough time finding facilities to process their meat.
