Upstate dairy farms seem to be constantly squeezed by financial pressures, whether it's wild swings in milk prices or facing down competition from giant operations. So, smartly, some have tried to opt out of the game by offering premium milk directly to customers and/or making value-added products. But as Julia Reischel points out at the Watershed Post in highlighting Lazy Crazy Acre's decision to stop making gelato after chasing "the wholesale dragon" and trying to scale up -- that's a lot easier said than done.
