New hickory
News to us: Hickory syrup is a thing. It's kind of like maple syrup, but instead of being made from sap, the flavor is extracted from bark. And a company in Hoosick Falls -- called Hoosick Hickory -- makes hickory syrup and related products. (Apparently hickory syrup is new to a lot of people -- CNN reported last year there were "a dozen or so hickory syrup producers nationwide.") [Dave's Cupboard] [Troy Record] [CNN]

Hickory syrup is delicious. It has a much more complex flavor than maple syrup. We were gifted some from a producer in north central PA (I believe). That said, I didn't realize it was made from the bark and not the sap. I hope they're not cutting down hickory trees to make it.
