Josh Colleto -- the CIA-trained chef who headed up the kitchen at the Flying Chicken in Troy -- is moving on to "pursue other interests," according to the restaurant's Facebook page. They've been turning out some very good chicken and waffles at the Flying Chicken (as featured in Eat This) -- as well other tasty food -- so let's hope they keep it up. [via @FUSSYlittleBLOG]

This shocking news was shocking. This is my new favorite restaurant. Although I can't blame the CIA graduate, there's probably a better paycheck out there than a fried chicken joint.
