Serious attention for Nighthawk's Kitchen

Troy-based Nighthawk's Kitchen and owner Christian Noe got some attention from Serious Eats's A Hamburger Today this week. Writes Max Falkowitz after a visit to the Troy farmers' market: "The most enterprising of those stands, and arguably the tastiest, is Christian Noe's Nighthawk's Kitchen. His griddle-based operation draws the longest line at the market, and after a taste of his steak-y smashed burger, it's easy to see why." [A]nother factor that allows some politicians to slide into corrupt practices is the overriding notion that if they hadn't chosen to become "public servants" that they'd be making mega bucks on the corporate world. Which maybe they would. But it seems to give them license (in their own minds) to exploit any ethical grey area to make up for that loss of income.
