Interesting: A producer of maple syrup out near Watertown claims they can coax flavors such as spiced rum and peach cobbler out of maple sap by evaporating it very slowly. The producer -- Zoar Tapatree Syrup Co. -- sells online and through Beekman 1802 (interview). [Modern Farmer]
